Eat your vegetables

Eat your vegetables

Generally, I try to feed my family well, but it doesn’t always work out that way.  I hashtag #healthyfoodforbusyfamilies all over instagram then feel like a fraud when they are fed unhealthy food even when when we have all imitated sloths and desperately needed some greenery in our guts. I mean, last week after a sausage sizzle at the school’s meet and greet I took them for Dominoes, so…you know? I do the best we can, and in the wise words of Elmo, “It’s a sometimes food”. The concept of healthy food really depends on how organised I am, and…

Roasted Corn Dip

Roasted Corn Dip

This dip is based on the Mexican Corn Salad Esquites, which apparently is a staple market food, sold in a cup and eaten with a spoon. This is my idea of heaven! I wish our local markets would get on board. The original Esquites recipe calls for mayonnaise, which we don’t do because egg intolerance blah blah blah, So! I played around with it and made it allergy friendly, then served it alongside some avocado Pico de gallo and a bowl of corn chips. My advice at this point is to stand back.   Ingredients 2 or 3 cobs of…

Chicken and Leek Pies

Chicken and Leek Pies

Yesterday, we had a deluge of rain. It was cold, and the almost horizontal wind was so strong it pushed a lot of rain underneath our closed windows, which resulted in a damp, unpleasant clean up. Seriously, almost every towel in the house was used to mop up the worst of it. We also had to change rain soaked sheets on the bed before getting the steam mop out to clean up the floors. AND the hot water system broke down. RUDE! We had to boil giant pots of water on the stove so that everyone could have a bath! Seriously, it…

Cauliflower Fritters

Cauliflower Fritters

Good heavens, we love a fritter in the Casa Chaos! I can put any ingredient in them and they will be eaten. Leftover mashed potato? Too easy. Corn, zucchini, sweet potato, prawns, fresh herbs, chickpeas and/or chicken? Make sure there is enough for seconds. They are super easy and seem to round out the meal nicely with their hint of the frypan. These almost caused a riot at the table recently, so I thought I’d share the recipe. This recipe is easily doubled! Cauliflower Fritters Ingredients 2 cups of steamed cauliflower, chopped into smallish pieces – about the size of a pea? 2…

BBQ Rubbed Pork in the slow cooker

BBQ Rubbed Pork in the slow cooker

I am a big fan of American style BBQ. I dream of one day hanging out at one of those all night pig smoker/BBQ pits, when you stay up all night and drink bourbon and keep the fire stoked so your luscious BBQ pork will melt in your mouth when you finally get to eat it. A girl can dream, right? Sadly I have no smoker, but what I do have is a slow cooker. It’s not the same, but it’s pretty darn good. As this recipe was already as inauthentic as you could get, I decided to go even further…

Instagram Recipes

Instagram Recipes

You know, I post over on instagram almost daily, and sometimes more than that. I mostly post images of whatever I’m cooking for dinner, and I’ve realised that despite getting a good response, I rarely post the recipe for it! I guess that unless a recipe requires careful research, I generally cook on the fly, and I tend to think that sort of cooking doesn’t need a recipe so why would I write one? And do you know what else I realised? This is faulty fucking logic because my main objective with this blog is to share how easy it…

Honey Soy Pork

Honey Soy Pork

Sometimes it’s best to keep things simple with a good cut of meat, to let the higher quality shine through. My old friends Murray Valley Pork recently gave me some gorgeous pork to play with, so for this loin I decided to do just that and make some delicious honey soy pork. There are a few steps you can take to maximise the results when cooking meat, to stop it being too dry or tough – Murray Valley Pork have taken great care to ensure the product is the best is can be by the time it reaches your kitchen, it would be a shame…

Chicken Pot Pie

Chicken Pot Pie

I’ve been wanting to make chicken pot pie for like, ever. It sounded like the best kind of comfort food; home made but still a pie, full of veggies and chicken, and obviously the real star attraction – crispy puff pastry! I’d been searching for ramekins of a decent size and modest price for a while, but they were either too small, too expensive, or not cute enough. I feel like I’ve scoured every chain store, kitchen ware outlet and op shop for miles around over the last 12 months! And then the cooler weather drove a desire for something…

Salads for Disparate Eaters

Salads for Disparate Eaters

Long time readers will know I have a family of disparate eaters. One child loves any type of onion and potato, and is quite open to chili; he does however have an egg intolerance and finds salad greens unpleasant, but he’s pretty good with cooked greens. The youngest child will eat fresh crunchy salad and fresh fruit forever, even tomatoes as long as they are very small. Do NOT attempt to feed him anything the least bit spicy, or oniony, or gravy covered or something with a sauce, unless it’s garlic sauce, or somehow involves bacon. Actually, don’t put sauce on…

Fried Wontons

Fried Wontons

Recently we tried a new Chinese restaurant, and their menu listed Fried Wontons at 6 for $3.60. I thought this was pretty reasonable and something the monkey brothers might like to try…no, really!  They were not all for me! True!! Anyway, EVERYBODY loved them, and it got me thinking about how easy it would be to make them. Is there anything better to snack on than something meaty and fried? I think not. Fried things are my crack. *Sighs, shakes head* Thankfully this recipe makes so many you won’t mind sharing. Fried Wontons Ingredients 1 packet of square wonton wrappers…
